Learn to love Soy
Soy is used extensively in tofu by the world’s thinnest societies and cultures. Used extensively in the Far East, it is becoming increasingly popular here in the Americas, but still has a long way to go.
But it is time to make way for your Pad Thai, Miso soup, and Inari sushi. Tofu, made from soy contains all of the essential amino acids in sufficient quantities to support human life. To put it simply you could live off of soy. And you could live off of soy without worrying about cholesterol, saturated fats, or your blood pressure. It is one of the most healthy foods out there, as the FDA stamp of approval proves.
Soy is loaded with omega 3 fatty acids, essential for heart health. They are rich in nutrients and vitamins and minerals including large amounts of calcium, iron, potassium, amino acids, vitamins C and K, and fiber. And once again, they are a healthy source of protein without requiring the side effects of a diet high in meat. You can eat soy everyday all day and never have to worry about kidney stones. Let’s see red meat make that claim.
